Relaxation Recipe – Avocado Salad

Arugula, Avocado, and Walnut Salad with Honey Dressing

This healthy combination of 3 super relaxation foods (avocados, walnuts, honey) delivers a savory salad loaded with omega-3 fatty acids, folate, and other B vitamins that are fantastic for optimal nervous system health.

Ingredients (Serves 4)
3 avocados, peeled and sliced
small bunch of arugula, washed
1/2 cup toasted walnuts
1/4 cup sun dried tomatoes, sliced
1/2 cup olive oil
2 tablespoons honey
4 tablespoons red wine vinegar

Place avocado slices, arugula, walnuts and sun dried tomatoes on plates.
Combine vinegar, salt, ground black pepper, and honey.
Add olive oil, stir thoroughly.
Whisk well so you get a thick vinaigrette.
Pour the dressing over the salad and serve.
